Forno Bravo Wood-fired ovens
Founded in 2003, Forno Bravo has quickly grown to become a global leader in wood-fired pizza ovens for pizzerias, restaurants and homeowners. Oven Design
We collaborated with FB to co-engineer a wood fired oven exclusively for customers of Fire Within. Specifically, we maximized the strength to weight ratio to produce stronger, more efficient, and best of all, most portable wood fired ovens known as the Traditional Neapolitan Low Dome Design.
Oven Performance
Yes, it’s possible to bake a pizza in 90 seconds. FB ovens’ heat times range from 50 minutes to 1 hr. They maintain 500+ degrees for a day after the fire has been extinguished and they are capable of reaching temperatures hotter than 900 degrees. FB ovens reduce wood consumption by 30%, compared to a traditional brick oven. You could bake more than 1,000 pizzas in 8 hours for less than $20 of wood. The quality of insulation and essential high-thermal mass in the ovens’ domes results in an 80% fuel-efficient wood fired oven.
Oven Floors
The new FB floors are true firebrick tile: 135 lb/ cu. ft. density, 38% alumina, compressed to 2,700 psi and kiln fired to 2,650F (a temperature at which the materials sinter, or become partially ceramic by melting and re-forming stronger crystal structures). They are dramatically better than air-set floors and they are practically bullet proof. These ovens showcase advances in culinary technology, and offer years of wonderful, worry-free baking.
